As Summer nears, our chefs at High Hampton are looking ahead to their favorite ingredients and evolving their seasonal menus to showcase the best of local flavors. Executive Chef Scott Franqueza and Pastry Chef April Franqueza have shared some key ingredients they’re excited to incorporate into their menus this Summer. Get ready for a season filled with delicious meals that will leave you craving another bite!

Sweet corn tops the list of best Summer ingredients for High Hampton Executive Chef Scott Franqueza. As corn nears its peak season and grows abundant with fresh flavor, it will make an appearance on your plate in the Dining Room in ways you may not expect. Chef Scott likes to get creative with this traditional ingredient by juicing the corn and bringing it to a simmer to make a perfectly balanced, sweet yet savory pudding. He then adds grilled corn kernels to diversify the texture and to add a gentle smoke flavor to the dish. 

High Hampton Pastry Chef April Franqueza, a 2025 James Beard Award Finalist, is excited to create fresh breakfast pastries and decadent desserts featuring ripe, juicy peaches. You can look forward to starting your mornings off with a peach compote-filled Danish or muffins elevated with the diced fruit. When it comes to rounding off dinner, Chef April is excited to add one of her favorite desserts back onto the Dining Room’s menu: peaches and cream cake. Get excited to sink your fork into layers of moist vanilla almond cake topped with fresh peach compote to get a taste of Summer in every bite!
