Summer Flavors
Seasonal ingredients are in full swing in Cashiers! Hear from our chefs on their favorite ingredients of the season.
"Without a doubt, my most favorite thing about the season is the fresh and local produce that come through the doors. Peaches, blackberries, blueberries, basil, lemon verbena, rhubarb… the list goes on and on! Those fruits, vegetables, and herbs are so much more spectacular in the summer, and their flavor really shines through to our guests. All of the fresh fruit reminds me so much of why I love baking- fresh peaches remind me of summers at my grandmother’s house, eating them out by the pool, or the tart blackberries remind me of picking berries in my parents back yard that would later be turned into pies." -April Franqueza, Pastry Chef
"My two favorite ingredients of the Summer are chanterelle mushrooms and corn. I feel they pair exceptionally well together! Want to try making your own blueberry shrub? A traditional shrub recipe uses a 1:1:1 ratio of vinegar, sugar and your fruit of choice. For this blueberry shrub, the High Hampton Beverage team uses white vinegar and white sugar to keep the flavors fresh!
